Baking Pan Size Conversion Guide
Pan swaps work when the replacement holds roughly the same amount of batter at a similar depth. The easiest way to compare pans is by surface area, then use the recipe's visual doneness cues because a shallower or deeper layer changes how quickly the center bakes.

These are surface-area comparisons, not exact capacity measurements. Pan height, sloped sides, and fill level still matter.
The easiest reliable swaps
- An 8-inch square pan and a 9-inch round pan have almost the same surface area, so they are often good substitutes when their depths are similar.
- Two 9-inch round cake layers together have about 127 square inches of surface area, close to a 9 × 13-inch pan at 117 square inches. The batter will be slightly deeper in the rectangle.
- A 10-inch round skillet is close in area to a 9-inch square pan, which is useful for cobblers, cornbread, and some skillet cakes.
- A loaf pan is not a direct area-based substitute for a shallow cake pan because its tall sides create a much deeper center that needs more time to bake.
How to calculate a pan yourself
For a rectangular or square pan, multiply length by width. A 9 × 13-inch pan is 117 square inches. For a round pan, multiply the radius by itself and then by 3.14. A 9-inch round pan has a 4.5-inch radius, so its area is about 64 square inches.
Divide the replacement pan area by the original pan area to see the difference. A result near 1.0 means the batter depth will be similar. A much larger pan makes a thinner layer; a much smaller pan makes a deeper layer and can overflow.
What changes when the batter is shallower
- Start checking earlier because the center has less distance to heat through.
- Edges may brown sooner, especially in dark metal pans.
- Thin brownies and bars can go from fudgy to dry quickly, so visual cues matter more than the original timer.
What changes when the batter is deeper
- Expect a longer bake and watch for an over-browned top before the center is set.
- Lowering the oven temperature slightly can help some deep cakes bake more evenly, but only do this when you can monitor doneness closely.
- Never fill a pan to the brim. Leave room for the batter to rise.
- If you have a large amount of extra batter, bake it separately rather than forcing it into an undersized pan.
Glass, dark metal, light metal, and cast iron
Pan material changes browning. Dark metal and cast iron absorb heat aggressively and can create darker edges and bottoms. Glass retains heat and makes it easy to see browning but can behave differently from metal. Light-colored aluminum is usually the most neutral reference point for many baking recipes.
When changing both the size and the material at the same time, use the recipe's doneness cues and begin checking early. A timer cannot account for both variables perfectly.
