Ingredients

  • 1 sheet all-butter puff pastry, thawed
  • 1.5 lbs mixed heirloom tomatoes
  • 4 oz goat cheese, softened
  • 1/4 cup basil pesto
  • 1 tbsp extra-virgin olive oil
  • Flaky sea salt and cracked black pepper
  • Fresh basil leaves for garnish

Instructions

    Preheat oven to 375°F. Slice tomatoes and lay them on a parchment-lined sheet. Drizzle with olive oil, salt, and pepper. Roast for 45 minutes until jammy.

    Roll out puff pastry and transfer to a parchment-lined baking sheet. Score a 1-inch border around the edge.

    Spread pesto over the center, dot with goat cheese, then arrange roasted tomatoes on top.

    Bake 25–30 minutes until the pastry is deeply golden. Cool slightly, garnish with basil, and serve.
