Baked Berry Oatmeal
The breakfast I assemble on Sunday night so Monday takes care of itself: oats, milk, and eggs baked with a heap of berries until the top sets and the fruit collapses into jam. It reheats beautifully all week, one square at a time.

Cooking Notes
- Spread the berries evenly through the oat mixture so their juice is distributed instead of collecting in one wet area. Frozen berries can usually go in without thawing first.
- Let the oats sit briefly in the liquid before baking if time allows. A short hydration period helps the center cook evenly and gives the finished oatmeal a cohesive texture.
- Rest the pan after baking before cutting or scooping. The oats continue absorbing liquid as they cool, which turns a loose center into a sliceable but still tender breakfast.

Ingredients
- 3 cups old-fashioned rolled oats
- 1 tsp baking powder
- 1 1/2 tsp ground cinnamon
- 1/2 tsp kosher salt
- 2 1/2 cups whole milk
- 2 large eggs
- 1/3 cup pure maple syrup
- 3 tbsp unsalted butter, melted
- 2 tsp vanilla extract
- 3 cups mixed berries (blueberries and raspberries)
- Plain yogurt and extra maple syrup, for serving

Heat the oven to 350F and butter a 9x13-inch baking dish.

Whisk the oats, baking powder, cinnamon, and salt together in a large bowl.

In a second bowl, whisk the milk, eggs, maple syrup, melted butter, and vanilla until smooth, then pour it over the oats and stir.

Fold in two-thirds of the berries, scrape everything into the dish, and scatter the rest of the fruit over the top.

Bake for 38 to 42 minutes, until the center is set and no longer sloshes when you nudge the pan.
