Ingredients
- 1 lb flank steak, sliced thin against the grain
- 1 tbsp cornstarch plus 1 tsp for the sauce
- 3 tbsp soy sauce
- 2 tsp toasted sesame oil
- 1 tbsp grated fresh ginger
- 3 cloves garlic, minced
- 1 large head broccoli, cut into florets
- 1/2 cup beef stock
- 1 tbsp brown sugar
- 2 tbsp neutral oil
Instructions

Toss the sliced beef with a tablespoon of cornstarch and a splash of the soy sauce, and let it sit for fifteen minutes so the coating sets.

Whisk the remaining soy sauce, stock, brown sugar, sesame oil, and the last teaspoon of cornstarch together so the sauce is ready before the pan gets hot.

Sear the beef in a screaming-hot skillet in two batches, about ninety seconds per batch, and pull it out while it is still pink in the center.

Add the broccoli with a few tablespoons of water, cover, and steam for three minutes until it turns bright green and barely tender.

Return the beef with the garlic and ginger, pour in the sauce, and toss for one minute until everything is glossy and coated. Serve over rice.
