Cinnamon Overnight Oats with Berries
The breakfast I make on Sunday night so mornings are easier: oats softened in almond milk with cinnamon and maple, thick and spoonable by morning and topped with whatever berries are around.

Cooking Notes
- Stir the oats thoroughly when you first combine them so there are no dry pockets at the bottom of the jar. Even hydration is what creates a creamy texture by morning.
- Add delicate fresh berries after the oats have chilled if you want them to keep their shape. Berries mixed in overnight soften and release more juice into the oats.
- Check the texture before serving and loosen the oats with a small splash of milk if needed. Different oat brands absorb liquid at slightly different rates during the overnight rest.

Ingredients
- 2 cups old-fashioned rolled oats
- 2.5 cups almond milk
- 1/4 cup maple syrup
- 3 tbsp chia seeds
- 1.5 tsp ground cinnamon
- 1 tsp vanilla extract
- Pinch of kosher salt
- Fresh berries for topping
- Toasted almonds for topping

Stir the oats, almond milk, maple syrup, chia seeds, cinnamon, vanilla, and salt together in a large bowl or jar.

Let it sit on the counter for ten minutes and stir once more — the chia seeds settle fast and clump if you skip this.

Cover and refrigerate overnight, or at least six hours, until the oats have drunk up most of the milk.

Loosen each portion with a splash of milk in the morning, since it thickens more the longer it sits.
