Ingredients
- 12 large eggs, beaten
- 1 lb breakfast sausage
- 1 lb frozen shredded hash browns
- 2 cups shredded cheddar
- 1 bell pepper, diced
- 1 small onion, diced
- 10 large flour tortillas
- Salt, pepper, and hot sauce

Brown the sausage in a large skillet, breaking it into small pieces, then lift it out and leave the fat behind.

Crisp the hash browns with the pepper and onion in that fat until the potatoes are golden and no longer soft.

Scramble the eggs slowly over low heat in a separate pan so they stay custardy rather than dry.

Lay each tortilla out, fill it with eggs, sausage, potatoes, and cheese, then roll tightly, tucking in the sides as you go.
