Ingredients
- 1.5 lbs sirloin, cut into 1-inch cubes
- 1 tbsp neutral oil
- 4 tbsp unsalted butter
- 4 cloves garlic, thinly sliced
- 1 tsp chopped thyme
- Kosher salt and cracked black pepper
- Chopped parsley for finishing
Instructions

Pat the steak cubes completely dry and season them generously with salt and pepper so they brown instead of steam.

Heat the oil in a heavy skillet until it just begins to smoke, then add the steak in a single uncrowded layer and leave it alone for two minutes.

Turn the pieces to sear the remaining sides, working in two batches if the pan is at all crowded.

Lower the heat, add the butter, garlic, and thyme, and spoon the foaming butter over the steak for a minute until fragrant.

Scatter parsley over the top and serve straight from the skillet with the pan butter poured over.
