Cooking Notes

  • Sear the roast in batches if necessary and let each surface develop a dark crust before turning. Browning is the main source of roasted flavor in a pressure-cooked pot roast.
  • Scrape the bottom of the pot thoroughly after adding liquid. Any browned bits left stuck in place can trigger a burn warning and keep their flavor out of the sauce.
  • Use a natural pressure release so the meat relaxes gradually, then thicken or reduce the cooking liquid after the roast comes out. The gravy should be finished separately from the meat.
