Cooking Notes

  • Pat the salmon dry before seasoning so the surface roasts rather than steams. If the fillet has a thinner tail end, tuck it slightly underneath to help it cook more evenly.
  • Pull the salmon when the center still looks moist and separates into large flakes with gentle pressure. Waiting until every part looks dry usually means the fish has gone too far.
  • Use fresh lemon at the end as well as during cooking. Bright acidity added after the fish leaves the oven tastes fresher and keeps the richness of the salmon from feeling heavy.
