Ingredients
- 2 lb side of salmon, skin on
- 4 tbsp butter, softened
- 2 cloves garlic, grated
- 1 lemon, half sliced and half juiced
- 2 tbsp chopped dill
- Kosher salt and black pepper
Instructions
- 1
Heat the oven to 425°F and let the salmon sit out for fifteen minutes so it cooks evenly instead of seizing in the center.
- 2
Mash the butter with the garlic, dill, lemon juice, salt, and pepper, and spread it over the top of the fish.
- 3
Lay the lemon slices across the fillet and bake for twelve to fifteen minutes, until the thickest part flakes but still looks glossy.
- 4
Rest the salmon for five minutes, then slide a spatula between the flesh and skin to serve it in clean portions.
