Cooking Notes
- Use a very hot skillet and cook the chicken in batches if the pan is crowded. The goal is browned edges, not pale chicken releasing liquid into the vegetables.
- Cook the peppers and onions separately from the chicken so each can brown without overcooking the other. Combine them only for the final minute with the seasonings and pan juices.

- 1.5 lbs chicken breast, sliced into strips
- 3 bell peppers, sliced
- 1 large onion, sliced
- 3 tbsp olive oil
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- Juice of 2 limes
- Warm flour tortillas
- Sour cream, cilantro, and salsa to serve

Toss the chicken strips with the oil, spices, and half the lime juice and let them sit while the oven or skillet gets very hot.

Spread the chicken, peppers, and onions across a sheet pan in a thin layer so everything roasts rather than steams.

Roast at 450F for eighteen to twenty minutes, stirring once, until the edges of the peppers blacken in spots.

Squeeze the remaining lime juice over the hot pan and scrape up any browned bits clinging to the bottom.
