The Story Behind This Recipe
I learned skillet shakshuka with feta the way I learn most things in the kitchen: badly the first time, better the second, and worth keeping by the third. This is version three.
I have made it for a quiet Tuesday and for a table full of people, and it behaves the same either way, which is the highest compliment I give a recipe.

Ingredients
- 2 tbsp olive oil
- 1 yellow onion, thinly sliced
- 1 red bell pepper, sliced
- 4 garlic cloves, minced
- 1 tsp sweet paprika
- 1 tsp ground cumin
- 1/4 tsp red pepper flakes
- 1 (28 oz) can crushed tomatoes
- Kosher salt and black pepper
- 6 large eggs
- 3 oz feta, crumbled
- Fresh cilantro or parsley, torn

Warm the olive oil in a large skillet over medium heat and cook the onion and bell pepper for about 10 minutes, until soft and starting to caramelize at the edges.

Add the garlic, paprika, cumin, and red pepper flakes and stir for a minute, just until the spices smell toasty.

Pour in the crushed tomatoes, season well, and simmer for 12 to 15 minutes until the sauce is thick enough to hold a spoon-shaped well.
