Ingredients
- 2 lbs boneless chicken thighs
- 1 cup pumpkin puree
- 1 can coconut milk
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 tbsp grated ginger
- 2 tbsp mild curry powder
- 1 tsp ground coriander
- 1/2 tsp red chili flakes
- Kosher salt and black pepper
- Cilantro for serving

Season the chicken thighs well and lay them in the slow cooker with the onion, garlic, and ginger scattered over.

Whisk the pumpkin puree, coconut milk, curry powder, coriander, and chili flakes together and pour it over the chicken.

Cover and cook on low for five hours, until the thighs are tender enough to pull apart with the edge of a spoon.
