- 3 lbs sweet potatoes, peeled and cubed
- 1 onion, chopped
- 4 cloves garlic, smashed
- 1 tbsp grated ginger
- 1 tsp ground coriander
- 1/2 tsp cayenne pepper
- 4 cups vegetable broth
- 1 can coconut milk
- 3 tbsp olive oil
- Juice of 1 lime
- Kosher salt and black pepper

Toss the sweet potatoes with two tablespoons of oil, salt, and pepper and roast at 425F for thirty minutes until the edges darken.
