Ingredients
- 5 lb boneless pork shoulder
- 3 tbsp brown sugar
- 2 tbsp smoked paprika
- 1 tbsp kosher salt
- 1 tbsp garlic powder
- 1 cup cider vinegar
- 1/2 cup ketchup
- 1 tbsp hot sauce
- Soft buns and coleslaw to serve

Rub the pork all over with the brown sugar, paprika, salt, and garlic powder, then leave it uncovered in the fridge overnight if you have time.

Set it in a slow cooker with half the vinegar and cook on low for eight hours, until a fork twists through the meat with no resistance.

Lift the pork out, let it cool slightly, and pull it apart in large shreds, discarding any pockets of solid fat as you go.
