Cinnamon Apple Crumble
Tart apples softened under a thick, sandy oat topping that bakes up crunchy rather than powdery. Using two kinds of apples gives you both slices that hold their shape and slices that collapse into sauce.

Ingredients
- 3 lbs mixed apples, peeled and sliced
- 1/3 cup granulated sugar
- 1 tbsp lemon juice
- 1 tsp cinnamon
- 2 tbsp cornstarch
- 1 cup all-purpose flour
- 1 cup rolled oats
- 3/4 cup packed brown sugar
- 1/2 tsp salt
- 3/4 cup cold butter, cubed
Instructions
- 1
Toss the apple slices with the granulated sugar, lemon juice, cinnamon, and cornstarch and pile them into a buttered baking dish.
- 2
Stir the flour, oats, brown sugar, and salt together, then rub in the cold butter with your fingertips until it clumps into pebbles.
- 3
Scatter the topping over the fruit in uneven handfuls so some parts stay chunky and crisp.
- 4
Bake at 375°F for forty-five to fifty minutes, until the topping is deep golden and the juices bubble slowly at the edges.
- 5
Let it settle fifteen minutes before serving so the filling thickens instead of running across the plate.
