- 2 tbsp olive oil
- 1 large onion, diced
- 2 carrots, cut into chunks
- 3 celery stalks, sliced
- 5 garlic cloves, smashed
- 3 tbsp tomato paste
- 1 1/2 cups dry red wine
- 1 1/2 cups beef broth
- 4 sprigs fresh thyme
- 2 bay leaves
