Cooking Notes
- Pat the mozzarella and tomatoes dry before threading the skewers. Excess surface moisture dilutes the seasoning and makes the finished platter slippery and watery.
- Add basil as close to serving time as practical so the leaves stay bright and fresh. Bruised basil darkens quickly once it is handled and exposed to moisture.
- Drizzle the balsamic component at the end rather than letting the skewers sit in it. That keeps the cheese clean-tasting and prevents the tomatoes from becoming overly soft.

Ingredients
- 1 pint cherry tomatoes
- 16 oz small fresh mozzarella balls, drained
- 1 large bunch fresh basil
- 3 tbsp extra virgin olive oil
- 1/3 cup balsamic vinegar
- 1 tsp honey
- Flaky salt and black pepper

Simmer the balsamic vinegar with the honey in a small pan until it reduces by half and coats the back of a spoon.

Let the glaze cool completely, because warm glaze will wilt the basil the moment it touches it.

Pat the mozzarella and tomatoes dry, then thread tomato, folded basil leaf, and mozzarella onto each short skewer.

Arrange the skewers on a platter, brush them lightly with olive oil, and season with flaky salt and pepper.

Drizzle the cooled glaze over everything just before serving so the platter still looks bright when it hits the table.
